This morning, I found myself longing for the weekend, even though it’s only Wednesday. With two more days of work ahead, it feels like an eternity! While I’m not one to complain—after all, I genuinely enjoy my job—this week has been particularly busy. So, I decided to treat myself to something a bit unconventional for dinner. I’m talking about brunch-inspired dishes that feel indulgent and comforting. French toast has been a beloved favorite since my childhood, and when breakfast cravings hit, it’s often what I turn to.
But this time, I wanted to elevate the classic dish. Enter these sumptuous French toast cups filled with berries! They’re served in individual portions so there’s no need to share, which is fantastic since everyone in my house has their own berry preferences.
