- Pour one scrambled egg into each compartment of the cupcake tin—essentially, one egg equals one cupcake.
- Incorporate your chosen ingredients. For example, we typically add some chopped spinach, turkey sausage, and American cheese. You can either mix these ingredients in the tin before adding the egg or stir them into the egg once it’s been poured in. If you opt for the latter, give it a gentle mix with your fork.
- Bake in a preheated oven at 425°F for approximately 20 minutes. You’ll know they are ready when the edges start to turn golden brown.
These egg cupcakes freeze exceptionally well. After baking, allow them to cool completely before wrapping each one individually in plastic wrap. Place the wrapped cupcakes into a large gallon-sized Ziploc bag for storage. For defrosting, it’s best to leave them in the refrigerator overnight, but if you forget, you can always use the microwave for a quick defrost.
