Refreshing S’more Bars

When it comes to summer flavors, nothing evokes nostalgia quite like s’mores. They remind me of sticky fingers, burnt sticks, glowing coals, starry nights, fireflies, and the simple joy of a full belly. Over the years, I’ve encountered several recipes that attempt to mimic the classic s’mores experience in the form of bars or cookies. Unfortunately, many of these recipes didn’t quite hit the mark. I craved that melty goodness of a toasted marshmallow, the crunch of graham crackers, and the rich decadence of chocolate. So, I decided to create my own version.

For me, Hershey’s chocolate is the only way to go. While I appreciate artisanal chocolates from time to time, nothing compares to the classic Hershey’s when it comes to s’mores. It’s simply an essential ingredient.

These S’more Bars feature a whopping eight Hershey bars and a generous ten ounces of broken graham crackers. I opted for larger pieces of graham crackers to create a delightful mix of textures in each bite—just like a traditional s’more. I’ll admit, I dream of making marshmallows from scratch, but as a busy parent of four, that’s not realistic. When I’m short on time and can’t light a campfire, this bar recipe is my go-to solution—no hassle involved!

Once these bars emerge from the oven, the aroma of chocolate and sugar will be irresistible. My entire home filled with the delicious scent, and my kids were practically begging for a taste. However, patience is key here; the bars will be gooey right out of the oven. For the best results, allow them to cool in the fridge for about two hours. But if you simply can’t wait, go ahead and scoop some into a bowl. A scoop of ice cream on top wouldn’t hurt, either—I promise I won’t tell!

Ingredients:

  • 3 cups flour
  • 1 Tbsp baking soda
  • 1 tsp salt
  • 2 sticks butter, softened
  • 2 cups brown sugar, packed
  • 4 eggs
  • 2 tsp vanilla extract
  • 10 oz graham crackers, broken into large pieces
  • 1 bag (10 oz) marshmallows
  • 8 Hershey bars, broken into small pieces

Instructions:

  1. Preheat your oven to 350ºF and grease a 9×13 baking dish.
  2. In a large mixing bowl, whisk together the flour, baking soda, and salt. Set this aside.
  3. In a stand mixer (or using a handheld mixer), cream the softened butter and brown sugar until fluffy and light.
  4. Add the eggs one at a time, mixing on low to medium speed until just blended.
  5. Mix in the vanilla for about a minute on low to medium speed.
  6. Gradually incorporate the flour mixture until just combined.
  7. Gently fold in the graham crackers, marshmallows, and chocolate by hand.
  8. Press the mixture into the prepared baking dish. Bake for 30 minutes or until golden brown, and a toothpick inserted into the batter (not the chocolate or marshmallows) comes out clean.
  9. Let the bars cool in the fridge before serving. Store any leftovers in the refrigerator.
