It’s no secret that I have some peculiarities, one of which is my strong aversion to raw chicken. The texture—fleshy, slimy, and pink—makes it difficult for me to consume after handling it. However, I make an exception for my chicken salad, perhaps because I take pride in how delicious it is. Today, I’m taking on the role of a food blogger to share this recipe with you. Don’t worry, I’ll return to writing about parenting tomorrow, leaving culinary discussions to the experts.

Ingredients Needed:

  • Chicken Breasts (I typically use 6, but you can adjust to 2 or 4 as needed)
  • Orange Marmalade or Apricot Jam (about half a jar)
  • Raisins (approximately 3/4 cup)
  • Almonds or Walnuts (around 1/2 cup)
  • Mayonnaise (I prefer it on the drier side, so add according to your taste)
  • Chives, fresh or dried (a few dashes)
  • Chopped Apples, Grapes, and/or Celery (1/3 cup of each)
  • Salt & Pepper (to taste)

Instructions:

  1. Preheat your oven to 350 degrees. Cover the chicken with the jam and bake for about 45 minutes.
  2. Once cooked, allow the chicken to cool and then transfer it to a food processor, along with any remaining jam that hasn’t liquefied. If you lack a food processor, finely chop the chicken by hand—this is crucial!
  3. Move the chicken to a mixing bowl, adding the rest of the ingredients, finishing with the mayonnaise.
  4. Stir until everything is well combined. You can serve it right away or refrigerate for later use.

This salad is delightful over greens paired with a sweet dressing like poppyseed. Alternatively, serve it on a croissant and indulge in a fantasy of picnicking in the south of France. Regardless of how you present it, this dish consistently receives rave reviews, and even I find it enjoyable—which speaks volumes.
